I don’t know about you, but I absolutely LOVE any type of baked sweets – whether that be cookies, brownies, anything with chocolate, cupcakes, etc.
And something else that I LOVE is baking my own desserts! The best part about baking your own desserts is that you can tailor it to however you like and whatever you enjoy!

It’s a lot of fun to experiment with different flavors and toppings…which leads me to these Ooey Gooey Butter Bars!

Yep, that’s right. These Ooey Gooey Butter Bars will definitely land space in your recipe book and you ~butter~ believe me when I say these bars will be a HIT at your next event!
My Ooey Gooey Butter Bars are great to make for any occasion – whether that be for graduation parties, wedding receptions, anniversaries, date nights, picnics, girls’ nights, etc.

So, how do you make butter bars from scratch? Follow the recipe below to learn how!
This recipe is a two-parter. First, we’ve got to make the shortbread – aka the Crust, then we can make the Ooey Gooey topping! 😉
Ooey Gooey Butter Bars recipe yield, baking time & ingredients
Yields: 48 bars (if cut into 2 1/2 inch squares)
Total Make + Cook Time: 1 hour 25 minutes (worth it though)
Time to MAKE:
- Crust = 15 minutes
- Topping = 20 minutes
Total time = 35 minutes
Time to BAKE:
- Crust = 20 minutes
- Crust + Topping = 30 minutes
Total time = 50 minutes
Ooey Gooey Butter Bars – Crust Recipe:
Necessary cooking equipment:
- 9×13″ Pan
- Aluminum Foil
- Cooking Spray
- Large Bowl
- Whisk or Electric Mixer
- Plastic Spatula
- Fork
- Oven (obviously)
Ingredients:
- 2 1/2 Cups Flour
- 3/4 Cup Powdered Sugar
- 1/2 tsp Salt
- Pinch of Cinnamon (substitute = Nutmeg)
- 12 Tablespoons Melted Butter
Ooey Gooey Butter Bars – Topping Recipe:
Necessary cooking equipment:
- Large Bowl
- Whisk or Electric Mixer
- Plastic Spatula
- Oven (duh)
Ingredients:
- 8 Ounces of Cream Cheese (room temp)
- 8 Tablespoons of Butter (room temp)
- 4 Cups Powered Sugar
- 2 Eggs + 2 Egg Yolks
- 2 Tablespoons Vanilla Extract
- 1-2 Cups Chocolate Chips (optional)
- You can also add nuts, m&m’s, or sprinkles! Don’t be afraid to add your favorites!
Alright, who’s ready??
Directions on How to make the Ooey Gooey Butter Bars Crust
In a 9×13″ pan, cover the pan with aluminum foil and spray cooking spray liberally all over the foiled pan – don’t forget the sides!
Set your oven to 350 degrees.
In a large bowl, combine 2 1/2 cups flour, 3/4 cup powdered sugar, 1/2 tsp salt and a pinch of cinnamon. I added more of a ~dash~ of cinnamon because I love cinnamon, but it’s up to you! After mixing all those ingredients together, drizzle in 12 tablespoons of melted butter and stir all ingredients together with a plastic spatula.
Jenna’s Pro Tip: Spray the plastic spatula with cooking spray to help keep your ingredients from sticking to it when mixing!
Once all combined, pour the ingredients from the large bowl into the 9×13″ pan and mash it in there. Like actually use your hands and spread it all on the pan evenly. Obviously, you’ll want to wash those dirty hands before touching your delicate yummy crust. 🙂
Once you’ve spread your crust on the pan, take a metal fork and poke all around the crust to help it rise evenly.
Next, put the crust in the 350-degree oven for 20 minutes.
Then take it out, let it cool, and while you’re waiting for it to cool, it’s time to make the topping!
You can start making the topping while the crust is in the oven, just make sure to keep an eye on it!
Directions on How to make the Ooey Gooey Butter Bars Topping
In a large mixing bowl, beat together 8oz of cream cheese, 8 tablespoons of butter, and work in 4 cups of powdered sugar in batches. Now, if you don’t have an electric mixer, like me, this will be an arm WORK OUT! But it’s good because we can work off some of these calories that we are about to indulge in. Anyway, you’re going to want to whip this until it’s fluffy. You’ll know what I mean when you get there.
Once your topping is fluffy, work in 2 eggs plus 2 egg yolks (that’s the yellow part of the egg FYI). Now, add 2 tablespoons of vanilla extract and beat it all together at a high speed for about 2-3 minutes.
Alright, now go ahead and take your CLEAN finger and try a dab of the topping. There’s your sneak taste, now NO MORE!
*Just so I don’t get fined – please be aware of the raw egg in this batter. I do not encourage you to try the raw batter before it’s been baked. Anyway…
Use the plastic spatula to help spread the topping over the cooled crust. Once the topping is spread evenly, take your chocolate chips and sprinkle them all over the top.
Once you think you’ve added enough chocolate chips, put the pan back into the 350-degree oven for 30 minutes.
Then, let the pan cool for about an hour or so before you cut into it – trust me, you’ll want to wait to cut it, or else it falls apart!
Cut the Ooey Gooey Butter Bars into 2 1/2 square bars and enjoy the amazing gooey goodness!

This dessert is widely known for its delicious ooey-gooey center but also known for its tremendous amount of powdered sugar and butter. For this reason, I decided to make a keto-friendly, sugar-free version of these Ooey Gooey Butter Bars. It’s surprisingly easy to make these adjustments to sugar-free and the best part of this recipe is that it’s low-carb, gluten-free, and grain-free, too!
*Keep in mind, the ingredients are different but the baking instructions are the same.
Here’s how I modified the recipe:
Sugar-Free Keto Ooey Gooey Butter Bars – Crust Re:
Necessary cooking equipment:
- 9×13″ Pan
- Aluminum Foil
- Cooking Spray
- Large Bowl or Electric Mixer
- Plastic Spatula
- Fork
- Oven
Ingredients:
- 2 1/2 Cups Almond Flour
- 3/4 Cup Powdered Erythritol (substitute for powdered sugar – it’s an artificial sweetener commonly used in sugar-free baking)
- 1/2 tsp Salt
- Pinch of Cinnamon (substitute = Nutmeg)
- 12 Tablespoons Melted Salted Butter
- To modify this for fewer calories, consider using melted Grass-Fed Raw Salted Butter
Sugar-Free Keto Ooey Gooey Butter Bars – Topping:
Necessary cooking equipment:
- Large Bowl or Electric Mixer
- Plastic Spatula
- Oven
Ingredients:
- 8 Ounces of Cream Cheese (room temp)
- 8 Tablespoons of Butter (room temp)
- To modify this for fewer calories, consider using melted Grass-Fed Raw Salted Butter

Ooey Gooey Butter Bars do not need to be refrigerated. You can leave them out on your counter and when you are ready to eat, grab one at room temperature or reheat them on a warm microwaveable safe plate for about 5-10 seconds.
Surprisingly, these bars lasted about 6 days after baking if kept at room temperature. If you keep them in the fridge they will last 3-4 days longer. Just make sure to keep these bars in an airtight container no matter how you choose to store them.
Can I freeze Ooey Gooey Butter Bars?
Ooey Gooey Butter Bars can most definitely be kept frozen after baking, just make sure to keep them in a wrapped, airtight container.
How long can I keep my Ooey Gooey Butter Bars frozen?
If you would like to freeze the Ooey Gooey Butter Bars and save them for another time, place the bars in an airtight container and freeze for up to 3-6 months! Thaw these bars overnight and then microwave before serving.

If you are baking sweets, especially these Keto-friendly Ooey Gooey Butter Bars, I’d recommend using almond flour.
